Why not make your own crackers from lentils? And they'll taste good? Yep, like pizza! A much better snack than the ones from a bag, plus they're high in protein and gluten-free!

Pizza Lentil Crackers (200g)

150g red lentils
180ml water
25g tomato paste
15g nutritional yeast
1-2 cloves garlic
1 tbsp olive oil
2 tsp oregano
1 tsp fresh rosemary
1 tsp fresh thyme
1 tsp smoked paprika
1/2 tsp chili flakes
1/2 tsp salt
Pinch of coarse sea salt

First, soak the lentils in plenty of water (450ml) for at least 2 hours. Then drain, rinse, and strain. Now, combine the ingredients in a blender with all the other cracker ingredients, except for 1 teaspoon of oregano and the coarse sea salt, and blend until you have a smooth, slightly thick batter.
Spread the batter onto a baking sheet (40x30cm), smooth it out, and sprinkle with the remaining oregano and a little coarse sea salt. Bake in the oven for 18-22 minutes at 180°C (350°F) using conventional oven settings (top and bottom heat). The dough should firm up slightly but still be soft. Remove it from the baking paper and cut it into small pieces with scissors. Cut it into any shapes you like. Return it to the baking sheet and bake for another 10-15 minutes, or until crispy. Stir it occasionally to prevent it from getting too dark. Let it cool completely, and you're done!
