I was lucky to find ramps this Spring so I made… “Ramp & Scallion Pancakes”!! ^.^ I wish ramps were available all year long bc they taste amazinggggg in scallion pancakes 😘👌
For those not familiar with ramps, they’re Spring alliums. They taste like a blend of garlic and onion ~ very aromatic ☺️ and only available for a short period of time in the Spring. So if you see them… snag them!
For the recipe, I used my go-to scallion pancake recipe:

and added chopped ramps leaves in the filling + diced up ramp bulbs in the filing paste. Remember to bloom the diced ramp bulbs in the oil on low heat to get all the aroma out. Enjoy! 💕
