Cucumber
Tomatoes
1 can white kidney beans
Bell pepper
Chopped parsley
Dried mint
Salt & black pepper
Fresh lemon juice
Olive oil
🔥Roast the bell pepper at 200°C for 30 minutes, then broil for 1–2 minutes.
Let it cool slightly, peel off the skin, and chop it
Chop the remaining ingredients and toss everything together.
