Brazilian-Style Pineapple Tart
Ingredients (Serves 6-8)
Almond Biscuit Crust
200g flour
100g softened butter
50g icing sugar
50g ground almonds
1 egg
Vanilla Pastry Cream
500ml milk
80g sugar
45g cornflour
4 egg yolks
1 Madagascar vanilla bean
1 sachet vanilla sugar
Whipped Cream
250ml heavy cream (35% fat)
2 tbsp. 1 tablespoon icing sugar
Filling
1 small fresh pineapple (or well-drained canned pineapple)
Praline or crushed caramelized hazelnuts

Detailed Preparation
1. Prepare the shortcrust pastry
1. In a bowl, mix the softened butter, icing sugar, and almond flour until creamy.
2. Add the egg and mix until smooth.
3. Gradually incorporate the flour until a smooth ball of dough forms.
4. Roll out the dough between two sheets of baking paper.
5. Refrigerate for 2 hours to firm up.
2. Bake the tart shell
1. Preheat the oven to 175°C (350°F).
2. Line a 22 cm (9-inch) tart tin with the chilled dough.
3. Prick the base lightly with a fork.
4. Bake for 15 to 20 minutes until golden brown.
5. Let cool completely.
3. Make the pastry cream
1. Whisk the egg yolks with the sugar until the mixture turns pale.
2. Add the cornstarch and mix until smooth.
3. Heat the milk with the seeds from the vanilla bean and the vanilla sugar until it just begins to simmer.
4. Pour half of the hot milk over the egg-sugar mixture while whisking.
5. Return the mixture to the saucepan.
6. Cook over medium heat, stirring constantly, until thickened.
7. Transfer to a dish, cover with plastic wrap, pressing it directly onto the surface, and let cool.
4. Prepare the pineapple puree
1. Peel the pineapple and cut it into pieces.
2. Blend until smooth.
3. If the pineapple is very juicy, reduce it in a saucepan for a few minutes, then let it cool.
5. Make the whipped cream
1. Whip the very cold cream with the powdered sugar.
2. Whip until stiff and airy.
6. Assembling the tart
1. Spread the pastry cream over the cooled tart base.
2. Add a generous layer of pineapple puree.
3. Pipe or spread the whipped cream over the pineapple using a piping bag or spatula.
4. Sprinkle with crunchy praline or caramelized hazelnuts.
5. Refrigerate for at least 2 hours before serving.
Gourmet Tip
For an even more intense flavor, lightly caramelize the pineapple in a pan before blending it.
