High-Protein Waffles with Silken Tofu (5-6 Belgian Waffles)

Base:
100g rolled oats
100g whole wheat flour (spelt)
350g silken tofu
200-250ml soy milk
40ml olive oil
1 tbsp apple cider vinegar
2 tsp cream of tartar baking powder
Pinch of salt
Sweet version:
1-2 very ripe bananas (220g, peeled)
1/2 vanilla bean (seeds only)
1/2 tsp cinnamon
Savory version:
1 garlic clove
40g chickpea flour
1 tbsp ground flaxseed
1 tbsp nutritional yeast
1/2 tsp onion powder
1/2 tsp smoked paprika powder
1/2 tsp salt
Herbs to taste Choice

Mix the soy milk (200ml) with the apple cider vinegar and let it stand briefly to create a buttermilk-like consistency. Grind the rolled oats into a flour in a blender or use oat flour directly. Mix with whole wheat flour, baking powder, and spices – for the savory version, also add the chickpea flour and flax seeds.
Blend the silken tofu with milk and olive oil in a blender until creamy – for the sweet version, also blend in the banana and vanilla extract, or garlic for the savory waffles. Add the cream to the dry ingredients and mix until combined. Let the batter rest for 10-15 minutes. Mix again; it should have the consistency of thick yogurt and slowly drip from a spoon. If necessary, stir in a little more milk.
Pour the batter into the hot, greased waffle iron and bake the waffles one after the other. Then enjoy with your choice of toppings!
