Today we're making mini zucchini and potato pizzas: light, delicious, and perfect if you're looking to reduce inflammation, lose weight, or simply eat healthier without any fuss.
INGREDIENTS (5 servings)
• 2 medium zucchini
• 1 medium potato
• 3 tablespoons oat or spelt flour
• 1 egg
• Fresh herbs: parsley, mint, dill
• Salt
Toppings:
• Grated cheese
• Chopped tomato
• Corn
PREPARATION
1. Grate the zucchini and potato and squeeze out any excess water.
2. Mix with the flour, egg, herbs, and salt.
3. Shape into mini pizzas and top with cheese, tomato, and corn.
4. Bake for 20 minutes at 180°C (350°F).
