INGREDIENTS (5 servings) • 2 medium zucchini • 1 medium potato • 3 tablespoons oat or spelt flour • 1 egg • Fresh herbs: parsley, mint, dill • Salt Toppings: • Grated cheese • Chopped tomato • Corn PREPARATION 1. Grate the zucchini and potato and squeeze out any excess water. 2. Mix with the flour, egg, herbs, and salt. 3. Shape into mini pizzas and top with cheese, tomato, and corn. 4.
