I was sure it would be a success with a water temperature of 5°C... but the result was unexpected. It seems that a difference of just 1°C in room temperature can significantly affect how much the bread rises. My first bake with the Siroca bread maker resulted in an over-risen loaf. Hypothesizing that the water temperature was the cause, I tried baking with 5°C water on a day with a room temperature of 20°C, and it baked beautifully all the way to the top! However, when I tried baking under the same conditions on a day with a room temperature of 21°C, it rose too much again... I'm surprised at how much of a difference a 1°C difference can make. Next time, I'll try again after chilling the ingredients and the bread pan!
