🛒 Ingredients:
• 1 shortcrust pastry
• 4 to 6 ripe plums
• 125g ground almonds
• 100g softened butter
• 100g caster sugar
• 2 eggs
• 2 tablespoons flour
• 1 tablespoon brown sugar
• 1 tablespoon apricot jam
• A little icing sugar
👩🍳 Preparation:
1️⃣ Preheat your oven to 180°C (350°F) for 10 minutes.
2️⃣ Unroll the shortcrust pastry into a tart tin. Prick the base with a fork, cover with parchment paper, and add pie weights or dried beans.
3️⃣ Blind bake the pastry for 15 minutes at 180°C (350°F).
4️⃣ Meanwhile, prepare the almond cream: in a large bowl, mix the softened butter and sugar until creamy.
5️⃣ Add the eggs one at a time, then stir in the ground almonds and flour. Mix until smooth.
6️⃣ Pour this almond cream over the pre-baked tart base.
7️⃣ Wash the plums, cut them into quarters, and arrange them attractively on top of the cream.
8️⃣ Sprinkle with brown sugar to lightly caramelize during baking.
9️⃣ Bake for 20 to 25 minutes at 180°C (350°F), until the tart is golden brown.
🔟 Once out of the oven, brush the surface with apricot jam for a glossy finish.
✨ Finish with a light dusting of powdered sugar before serving.
