Order now at: www.verwürzt.de 😊 ############## RECIPE ## ############## ----------------------- Citrus Cheesecake Slices (20x20cm, 6 slices) ----------------------- Base: 80g rolled oats 80g almonds ** 80g dried, pitted dates 2 tbsp lemon juice 1 tsp lemon zest Pinch of salt Filling: 300g silken tofu 300g plant-based skyr/quark ** 100g dried, pitted dates 35g cornstarch 3 tbsp lime juice (1 lime) 2 tsp lime zest 4-5 basil leaves (use sparingly, otherwise it will be too overpowering) Optional Topping: 30g chopped pistachios 3 lime slices 3 lemon slices 6 Basil leaves ----------------------- ** The dates should be quite soft. If not, soak them in hot water for 15 minutes. Grind the rolled oats and almonds in a food processor until they resemble coarse flour. Add all the remaining crust ingredients and mix until you have a sticky, slightly crumbly mixture. Press this mixture into the bottom of a 20x20cm baking pan. If you prefer a crisp crust for your cheesecake, bake it for 10 minutes at 180°C (350°F) using conventional oven settings (top and bottom heat). Place all the filling ingredients in a food processor and blend until creamy. Pour the filling into the prepared pan, smooth the surface, and gently shake the pan to distribute the filling evenly. Bake in a preheated oven at 180°C (350°F) for about 35 minutes. The cheesecake is done when the filling has a firm, springy texture. Keep a close eye on the cake while it's baking. If the surface starts to brown, cover it. After baking, let it cool completely, remove it from the pan, and refrigerate for another 1-2 hours. Cut it into slices and, if you like, sprinkle with finely chopped pistachios and garnish with lime and lemon slices and basil leaves. ----------------------
