One of my favorite Mexican dishes is “Pozole Rojo”. This soup is super hearty & always satisfies the tummy ☺️ Ingredients: ~ Makes 5 servings ~ Pork shoulder 3lb Hominy 1 can Water 2 liters 1 Yellow Onion for the stock 1 White Onion 1 Whole Garlic Bulb 2 bay leaves Chicken Bouillon 2 tbsp Salt 2 tbsp Brown Sugar 1 tbsp Dried ancho chilies 5 Oregano 1/2 tbsp Paprika 1/2 tbsp Cumin 1 tsp Cabbage for garnish Radish for garnish Instructions: 1. Blanch pork in boiling water for 10 mins to remove impurities. Rinse & Wash. 2. Place in a large pot with water, 1 whole onion, 1 whole garlic cut in half, bay leaves, salt and chicken bullion. Bring to a boil and adjust to simmer. 3. Meanwhile, de-seed and soak dried ancho chilies in hot water for 10 minutes to soften up. 4. Remove the liquid. Add in half an onion chopped up, the remaining half of garlic, oregano, paprika, cumin, salt chicken bouillon, 2 ladles of the pork broth from the pot and blend until you get a smooth puree. 5. Pour the purée into the pot and mix 6. Open the can of hominy. Strain and rinse it. Then it add it to the pot. 7. Cover the pot and simmer for 2.5 hours 8. Meanwhile, prep the garnish. Julienne cabbage, dice the remaining half of onion and thinly slice the radishes. 9. After 2.5 hours, remove the whole onion, garlic bulb and bay leaves from the pot. 10.
