Ingredients – Chicken Meatballs:
400 g ground chicken breast & thigh
1 medium onion, grated & juice squeezed
1 tbsp fresh coriander (cilantro), finely chopped
1 clove garlic, minced
¼ tsp ground cardamom
¼ tsp ground coriander seeds
½ tsp grated lemon zest
2 tbsp brewed saffron
1 small egg yolk
2 tbsp almond meal or chickpea flour
Salt, black pepper, pinch of cinnamon & paprika
Method:
Mince the chicken in a food processor.
Mix with onion, garlic, spices, saffron, and almond meal.
Shape into small balls and pan-fry until golden. Drizzle with cherry syrup.
Parboil rice, layer with cherries, and top with meatballs. Steam until fluffy.
Serve with crispy potato tahdig for the ultimate Persian experience!
