☕ The Magic Coffee Cake that creates 3 layers all by itself! 😱🍰
Ingredients (6 to 8 servings)
4 eggs at room temperature
150 g sugar
125 g melted butter
115 g sifted flour
500 ml lukewarm milk
4 tsp instant coffee (such as NESCAFÉ)
1 tbsp lukewarm water
1 pinch of salt
Optional:
1 tsp vanilla extract
Unsweetened cocoa powder for dusting
Dark chocolate shavings
Preparation
1. Prepare the coffee
Heat about 100 ml of milk and dissolve the coffee in it. Then add the rest of the lukewarm milk.
2. Prepare the base
Preheat the oven to 160°C (325°F).
Separate the egg whites from the yolks.
Whisk the egg yolks with the sugar and water until the mixture turns pale.
Add:
the cooled, melted butter
vanilla (optional)
the sifted flour
Gently mix, then gradually pour in the coffee-infused milk.
The batter will become very liquid: this is normal.
3. Beat the egg whites
Beat the egg whites with a pinch of salt until soft peaks form.
Gently fold them into the batter with a spatula. Some pieces of egg white should remain visible: do not aim for a completely smooth batter.
4. Bake
Pour into a greased cake pan (ideally 20 to 22 cm).
Bake:
45 to 55 minutes at 160°C (325°F)
The center should be slightly wobbly.
5. Resting time is essential
Let cool completely, then refrigerate for at least 2 hours (overnight is even better).
Important Tips
To get the 3 layers
Don't overmix the egg whites.
Use lukewarm milk, not hot.
Respect the chilling time.
