Hi, my name is James. For over a decade I have eaten, cooked, and traveled from coast to coast. But the truth is, I have barely scratched the surface. There are more places to see, foods to eat, people to meet, and sometimes, things to cook. With the belief that food heals, restores, and connects the most opposite people, I am on a journey that may have no end in sight. But one thing is for sure, I am starving for more!

Over the years I have eaten may delicious meals. With each plate, location and bite being an experience. You accidentally, but gratefully begin to compare not just the foods you have eaten, but how each food and moment made you feel.

Ultimately, you choose a favorite. For me, a combination of experiences and meals always brings me back to Ceviche. Particularly Peruvian Ceviche. The acid and spice from the Aji Limon are constant palate cleansers making each spoonful the first bite. The onions, Camote, Choclo are there to balance the dish. Like anything worthwhile, it’s become better and improved in Peru. Then, the Leche de Tigre. If fresh Fish is king, Leche de Tigre is the Queen.

I’ll die saying this. Perhaps others have done so already. If you make ceviche and it’s not with Leche de Tigre, then, you made a cocktail. Leche de Tigre is so versatile yet, it’s the key component to the best Ceviche on Earth. Real Ceviche NEEDS to have it!
