Honey Potato Curry (Aloo Salan)
Ingredients:
4 medium potatoes, peeled and diced
2 tbsp vegetable oil
1 large onion, finely chopped
2 tomatoes, pureed
1 tsp ginger paste
1 tsp garlic paste
2 green chilies, slit
1 tsp cumin seeds
1 tbsp coriander powder
1 tsp turmeric powder
1 tsp red chili powder
1 tsp garam masala
2 tbsp honey
Salt to taste
Fresh coriander leaves for garnish
Water as needed
Instructions:
Prepare the Potatoes:
Peel and dice the potatoes into bite-sized cubes.
Boil the potatoes in salted water until they are just tender. Drain and set aside.
Cook the Base:
Heat oil in a large pan over medium heat.
Add cumin seeds and let them sizzle for a few seconds.
Add the chopped onions and sauté until golden brown.
Add Aromatics:
Mix in the ginger paste and garlic paste. Sauté for another 1-2 minutes until fragrant.
Add the pureed tomatoes and green chilies. Cook until the oil starts to separate from the masala.
Spice it Up:
Add coriander powder, turmeric powder, and red chili powder. Mix well and cook for a few minutes, stirring frequently.
Add boiled potatoes to the pan and mix until they are well-coated with the masala.
Create the Gravy:
Pour in water to achieve your desired consistency (usually about 1 to 1.5 cups).
Season with salt and bring to a simmer. Cook for about 10 minutes until the flavors meld and the sauce thickens.
Add Sweetness:
Stir in the honey and garam masala. Cook for another 2-3 minutes.
Adjust seasoning if necessary.
Finish and Serve:
Garnish with fresh coriander leaves.
Serve hot with rice, naan, or roti.
