Handmade Ramen Noodles
These are alkaline noodles and they are made with a special ingredient called "Kansui" which is basically sodium carbonate. You can easily make kansui by evaporating (baking/heating up) baking soda (Sodium bi carbonate)
You can prepare and store them in the freezer so you can put these together in 2 minutes. And yes, these are basically a healthier homemade version of your 2 minute Ramen. I will try and do a recipe video on these with the step by step guide but in case I can't, here's the exact measurements for the dough:
150g flour
1.5g Kansui (sodium carbonate)
1 pinch salt
60g water
Just mix and form a dough
Knead for 6 minutes
Rest for half an hour
Roll out and cut
Boil untill cooked through
Store in the freezer in an airtight container.
You can make these for the fraction of the cost of the instant noodles you get from the market.

So three days ago my family randomly said, "Chalo Lahore chaltay hain." And guess what I said, " Mujhe nai jana." However, reluctantly I had to go and this random trip landed us into The Shahi Qila which wasn't at all what I remembered it being when I first saw it. Much of it has deteriorated.
With sick kids in tow I couldn't capture much but was able to capture a few shots of their royal kitchen which was the only spot in the whole fort with zero tourists and ironically I liked it the most.
And some random shots from my free time in lahore.
I might be able to see the androon lahore again someday when my kids are a bit older but this too was an experience.

Cherry and Sour Cream Mini Cake: Easy, Delicious, and Perfectly Sized!
Baking isn't my strong suit, so I love making these delightful mini cakes that are just right for a sweet treat. This recipe features three scrumptious components: a fluffy vanilla sponge with juicy cherry chunks, a rich cherry compote, and a cherry-infused salted sour cream.
Recipe:

For the Sponge:
4 tbsp milk
4 tbsp flour
2 tbsp sugar
1 tsp butter
1/2 tsp baking powder
1/2 tsp vanilla essence
Combine all ingredients and microwave for 1 minute.

For the Sour Cream:
3 tbsp dairy cream
A pinch of salt
1 tsp lemon juice
Mix and let it sit for a few minutes until it sets.

For the Compote:
7-8 pitted cherries
4 tbsp sugar
A few drops of lemon juice
2 tbsp water
Cook until thickened, let it cool, and mix half of the compote with the sour cream.

To Assemble:
Hollow out the mini cake, pour in the cherry cream, and top with the remaining compote.
