Flexi-veggie Japanese cooking

Easy Japanese rice-based meals for people who cook mainly for themselves.
Warm, simple comfort food made with easy-to-find ingredients.

I’m Tokie, a Japanese home cook based in London.
I share Japanese home-style recipes using rice, tofu, eggs, and seasonal ingredients.
Many recipes include simple substitutes for Japanese ingredients.

I recently shared a video about Hiyayakko (Japanese cold tofu). Thank you for all your lovely comments!

It was interesting to see how many different ways people enjoy tofu around the world. Some of you shared your favourite toppings and combinations, which I really enjoyed reading.

What is your favourite way to eat cold tofu? I'd love to hear your ideas and toppings in the comments!
Veggie or non veggie are welcome.

I found something called ‘Tofu Noodles’ at the supermarket!
There are four flavours in total, and this is the spicy version.
In this week’s video, I’m sharing some tofu dishes that are popular in Japan.

【Japanese Herbs】While I’m in Japan, I’d like to introduce some Japanese herbs that are commonly used in everyday cooking.

This one is called "Mitsuba", which literally means “three leaves.”

As you can see in the photo, it’s a delicate Japanese herb made up of three soft leaves.

Mitsuba is one of the few vegetables and herbs native to Japan.

It has a fresh aroma similar to celery, and is often used as a finishing herb for miso soup, oyakodon, and chawanmushi (Japanese savoury egg custard) etc.

Thank you for your comments.
The answer to yesterday’s plant-based squid ink pasta was Nori paste / tsukudani seaweed.
You can use it in many ways—on rice, as an onigiri filling, or mixed into pasta.
The small jar in the photo is a shop-bought version.
In this week’s video, I’ll show you how to make it at home.

The reality of a Japanese breakfast.

Everyday meals in Japan are much simpler than many people imagine.

Today’s breakfast for my mother and me was steamed rice, Natto, Takana pickles, seasoned Nori seaweed, and Miso soup with Enoki mushrooms and Komatsuna made by my mother.

Takana pickles are one of my favourite Japanese pickles. Takana is a unique Japanese leafy vegetable, but I’ve also shared a similar pickle recipe on my channel using bok choy.

Maybe a Tamagoyaki omelette would have made it more complete, but honestly, this is more than enough for a quiet morning.

My onigiri on board ✈️
Whenever I travel to Japan or other European countries, I bring onigiri with me. Eating out for every meal while travelling gets expensive.

Once, airport security stopped me because they found my onigiri.

‘What’s this?’

Black, heavy, and round…
Back in the day, it probably looked pretty suspicious 😅

But ‘It’s my lunch’ was enough for them 😂
These are for eating on the plane.

Finally, I’m off to Japan.

A little while ago, I asked in the community tab what you’d like to see from Japan. Alongside the upcoming videos, I’ll also be sharing small moments, foods, vegetables, and everyday discoveries through community posts as much as I can.
