New video! https://youtu.be/RukDLvSxHkk You guys, all this duck has been so tasty, I feel spoiled. Plus with folks freaking out about the next pandemic, food shortages, gas prices and the lack of fertalizer... I can not even start to tell you how cozy it makes me feel knowing I have eggs, confit, lamb chops, milk and potential blankets/clothing (aka wool) out in my garden eating bugs, mowing the grass, and fertilizing for me! Im not 100% prepped or anything but I do have some cushion and resilience built in here that feels awful good.

Duck harvest continues. Legs prepped for confit, breasts off to dry and become "prosciutto". What is your favorite duck recipe? #anconaducks #foodsecurity

Duck day! My flock has been in terrible imballance because I had put off butchering our extra drakes for so long. But today I fixed the balance! We are back down to 1 man per 4 ladies, as ducks like it. The whole flock is more relaxed and calm in their foraging today.

Have you heard of Ancona ducks? Not a heavy meat bird by any means but a great dual purpose breed that has good mothering instinct, amazing forraging abilities, calm personalities, good egg production and decent meat yields as well. I love them! You can find more info on the livestock conservancy page - livestockconservancy.org/ancona-duck/ part of keeping this breed alive is utilizing them fully! Culling extras and subpar examples and keeping the strongest and most vibrant ones going strong. Do you raise any conservation list animals?

Have you ever had a food that transformed your life? Literally, changed the trajectory of your path and has shaped the person you are today?

Laugh all you want but im serious! In 2015 I went to Europe to visit friends and family. It was on this trip that I was introduced to cured meats, commercially and home produced, and I FELL IN LOVE πŸ’—

Truly, madly, deeply. πŸ₯–πŸ§€πŸ₯“

I ate BΓΌndnerfleisch along with many other joyous creations that impacted me so much that I decided I wanted to make these delicacies at home.

At first I was intimidated, its so counter to our modern American food handling practices -- and resources that rely on the truly traditional methods were few and far between at that time.

I started to share what I learned online on my YouTube channel and the crazy thing is people were interested in this strange new traditional skill i was falling in love with! Like really interested. My first video on the subject took off and has over 3 million views now!

Fast forward to today, ive been invited to speak and give demonstrations at homesteading and preparedness events. Im doing YouTube full time, and im going to publish a whole book on the topic of traditional meat preservation in 2027 with @sawdustpublishing 🀯

Me, a published author on this fascinating topic that has become so near and dear! Never in my wildest dreams could I have seen any of this comming when I had my first bites all those years ago.

So thank you Europe, and especially Switzerland, for starting me on this path πŸšΆβ€β™€οΈπŸšΆβ€β™€οΈπŸ›£

What do you enjoy better?

I'm debating doing more mini series style videos where a big concept video is broken down into multiple 10-12 minute videos OR making 1 large 30+ minute videos with all the information and chapters.
