Paneer Butter Masala Recipe
500 gms paneer/cottage cheese
1 cup curd
4 big onions
5 big tomatoes
2 tbspn tomato puree
1 inch pc of ginger
7-8 garlic pods
2 bay leaves
4-5 cloves
4-5 peppercorns
2-3 green cardamoms
1/2 inch stick cinnamon
2 dry red chillies( whole)
1 tbspn poppy seeds
Kasoori methi
Salt as per taste
1 tspn turmeric powder
2 tspn kasoori methi
1 tspn garam masala
1tbspn shahi jeera
1/2 tspn hing
2 tbspn butter
1 tspn pure ghee.
Steps to be followed:
Take a wok. Put 1 cup water. Add chopped onions, tomatoes, garlic, ginger, whole red chillies, bay leaves, cloves, peppercorns, cinnamon stick n poppy seeds. Let it simmer on medium heat for 20 minutes. Keep stirring in between. Let it cool. Once cooled, grind into smooth paste.
Now take another pan or wok. Put butter. Also add 1 tspn pure ghee to avoid butter getting burnt. Once hot add shahi jeera n hing. Let it splutter. Now add turmeric n kashmirin red chilly powder. Stir well now add paneer cubes. Saute for two minutes with soft hands and remove the cubes in a separate plate. Now in the same pan add the grinded paste n stir well. Now add the curd slowly n keep stirring continously till you see bubbles to avoid curdling. Now add a little water n let it cook for few minutes on medium heat. Finally add paneer cubes n stir well. Once done add garam masala, kasoori methi n 2 tspn of honey. Mix well n switch off the gas. It's done. Now garnish with ginger juliennes n kasoori methi. You can top it up with cream as well. Serve hot with naan, or chapati or rice as per your choice. Voila!
Note: you can also add cream before adding paneer cubes if you want the gravy on a richer side. I prefer to cook in minimum oil.

Sewai bowl with Rabdi Recipe 🍮
Recipe–
Ingredients– For bowl
100 gm vermicelli
2 tsp ghee
1 tsp cardamom powder
3 tbsp condensed milk
For quick rabdi–
1 cup milk
I cup cream or fresh malai
1tbsp corn flour
4tbsp cashew powder
4 tbsp milk powder
1tsp cardamom powder
4-5 tbsp sugar
Saffron threads
Chopped dry fruits –Almond, pistacchio chiraungi
Method–
•Take 2 spoon of ghee, add vermicelli and saute till it becomes golden brown in colour.
•Add 2 tbsp of condensed milk and mix well with a spatula, add the sticky mixture in a mould, set the mixture with spoon or fingers in the shape of the bowl.
•Put the mould in the refrigerator for 1hour till the vermicelli katori sets in the mould.
For quick rabri:
•Take a non stick pan. Add all the above ingredients for rabri in the pan and mix well.
•Set it in low flame and keep stirring consistently.
•Add dry fruits and elaichi powder in the rabri.
•Close the stove after mixing it for 3-5 mins and set it to cool in the fridge.
For serving:
•Demould the vermicelli bowl and put the rabri in it garnish with some dry fruits and serve.
