Bought a beautiful side of Beef Belly (Navel). It has the 7 bones in it. I don't want to make bacon. Have you ever cooked this cut before? What are some cooking ideas for a video?
Does pre-seasoning a brisket really matter. I seasoned half this brisket 45 mins early and half right before going on the pit. Checkbout the results at the link.
What's happening sports fans! I've ways believed that applying your rub and letting it sit on your meat for 20-30 minutes is the way to go. Recently, I've seen a couple of restaurant videos of them applying the rub and going immediately to the smoker. What are your thoughts? Do you think this makes any difference? I'm thinking of experimenting this week!
