No, Windows 2000 cannot run Minecraft 1.21.10. Modern versions of the game require Java 17/21 and modern graphics APIs that are completely incompatible with Windows 2000's architecture.
Why it's impossible:
Java Requirements: Modern Minecraft (Java Edition) requires Java 16 or newer, but the newest Java version supported by Windows 2000 natively is Java 6.
Graphics API: The game relies on OpenGL and modern GPU rendering that Windows 2000 drivers cannot support.
Lack of updates: Windows 2000 stopped receiving essential security and system updates over a decade ago.
What you can do:
If you are looking to play Minecraft on a classic OS, you are restricted to much older versions. Windows 2000 can generally only run early, historical alpha or beta versions of the game natively (up to Minecraft 1.2.5 with a heavily patched Java 5 or 6 environment).
For modern versions like 1.21.10, you will need a modern operating system such as Windows 10, Windows 11, a modern Linux distribution, or macOS.

I was pleasantly surprised to find out that the newest major version of Java Minecraft as of the making of this post still works on the Intel Celeron N2840 and Intel HD Graphics (Bay Trail), and on Windows 7 on top of that.
In fact, it runs better than Minecraft 1.21 and older. And this is without any performance mods.

I finally managed to get my Lenovo Legion Y520's NVIDIA GTX 1050 Mobile up and running in Windows 7 and 8!
Windows 7:
I had to make it so that immediately after logon, the OS loads a very lightweight 3D application. Specifically, I used Quake I with the Ultimate Quake Patch (you can find it by going to PCGamingWiki's Quake I page). To make sure the OS immediately loads the game-GPU fixer on logon and minimize the risk of the Lenovic shenanigans occuring aka the OS completely freezing or causing a blue screen related to the NVIDIA driver, install the game on your SSD, if you have one, to ensure the fastest startup , then make a shortcut of the game. Place that shortcut in the Startup folder of the Start menu. To ensure the Quake I "GTX 1050 fixer" consumes as little resources as possible, I dropped it's settings and lowered it's resolution to 320x200 (always use Windowed mode!!!). Minimizing or closing Quake I causes the GTX 1050 to disable itself, but it doesn't result in the OS freezing itself. To restart the GTX 1050, restart the OS. Also, avoid running stuff using the Intel HD 630, as that will also cause the GTX 1050 to disable itself (you can set the Preferred graphics processor option in the NVIDIA Control Panel to High-performance NVIDIA processor to minimize the risk).
The GPU works nicely with the workaround, even when using the last driver for Windows 7 - 475.14, from 2024! In the Windows 7 pictures, I'm running Cyberpunk 2.0, Phantom Liberty! You can run it on Windows 7 using this workaround: board.eclipse.cx/viewtopic.php?t=588
Windows 8:
I ended up upgrading my Windows 8 8400 install to Windows 8.1. The GTX 1050 works well, without the Quake I workaround being necessary, but the newest driver that works without any issues is 446.14. Use any newer driver than this one and you'll run into a problem where a lot of games will refuse to open, sometimes giving errors like DXGI_ERROR_DRIVER_INTERNAL_ERROR and similar. Another major issue is that the GTX 1050 randomly disables itself a lot with newer drivers, requiring a manual restart using the Device Manager.
In the Windows 8.1 pictures, I'm running Doom Eternal, which runs beautifully on Windows 8.1, despite this OS not being included in the official system requirements.

Well, a month after it's "death", the laptop decided to revive itself!
So the good old Legion Y520 is back at business!
After this, I made a Skyrim lag fix for potato PCs vid, where I ran the game on Windows 2000 + SwiftShader (and I also edited, rendered and published the video on Windows 2000, and yes, the video thumbnail was also made in Windows 2000)
