In some Syrian Christian homes of Kerala—especially in places like Kothamangalam, Perumbavoor, and parts of Thrissur—Pesaha (Maundy Thursday) is marked by baking the traditional appam over a hearth. This is chutta pesaha appam—a rare and deeply nostalgic preparation made in a cast iron uruli over firewood, with glowing embers placed on top.
