Persian Eggplant Dip with Kashk & Herbs 🍆🌿

🥣 Ingredients
• Eggplants — 4 medium
• Kashk (or whey/yogurt concentrate) — ½ to 1 cup
• Onion — 1 large
• Garlic — 3 cloves
• Dried mint — 1 tbsp
• Chopped walnuts (optional) — 2 tbsp
• Spices:
• Turmeric — 1 tsp
• Black pepper — ½ tsp
• Salt — to taste
• Optional flavor boost: Dried oregano or dried pennyroyal — ¼ tsp
• Optional: Ground golpar (Persian spice) — a pinch
• For warmth: Cinnamon — just a pinch
• Oil — as needed

Recipe :
1️⃣ Peel and fry (or roast) the eggplants.
2️⃣ Sauté onions and garlic with turmeric & black pepper.
3️⃣ Add mashed eggplants and cook together for a few minutes.
4️⃣ Mix in diluted kashk and let it simmer to thicken.
5️⃣ Top with kashk, crispy fried onions, and mint oil. 🍆🌿🧅
