🧆 Hummus Recipe (Classic)
🛒 Ingredients
1 cup boiled chickpeas (chana)
2 tbsp tahini (sesame paste)
2 tbsp lemon juice
1–2 cloves garlic
3 tbsp olive oil
½ tsp salt (or to taste)
½ tsp cumin powder
2–4 tbsp cold water (for smoothness)
👩‍🍳 Method
Prepare chickpeas
If using canned, rinse well. If home-boiled, remove skins for extra-smooth hummus (optional but worth it).
Blend
Add chickpeas, tahini, lemon juice, garlic, salt, and cumin to a blender or food processor.
Add liquid
Blend while slowly adding cold water until creamy and smooth.
Finish with olive oil
Add olive oil and blend again for 30–40 seconds.
Taste & adjust
Adjust salt, lemon, or garlic as you like.
🍽️ Serving
Spread in a plate
Drizzle olive oil on top
Garnish with paprika, cumin, or parsley
🌟 Tips
No tahini? Use 2 tbsp roasted sesame seeds + 1 tbsp oil and blend well.
For extra creamy hummus, blend lemon juice + tahini first, then add chickpeas.

🛒 اجزاء:
اُبلے ہوئے چنے – 1 کپ
تل کا پیسٹ (طحینہ) – 2 کھانے کے چمچ
لیموں کا رس – 2 کھانے کے چمچ
لہسن – 1 سے 2 جوئے
زیتون کا تیل – 3 کھانے کے چمچ
نمک – حسبِ ذائقہ
سفید زیرہ پاؤڈر – ½ چائے کا چمچ
ٹھنڈا پانی – 2 سے 4 کھانے کے چمچ
👩‍🍳 بنانے کا طریقہ:
چنوں کی تیاری
اُبلے ہوئے چنوں کو اچھی طرح دھو لیں۔ زیادہ ملائم ہموس کے لیے چنوں کے چھلکے اتار لیں (اختیاری)۔
بلینڈ کریں
بلینڈر میں چنے، طحینہ، لیموں کا رس، لہسن، نمک اور زیرہ ڈالیں۔
پانی شامل کریں
بلینڈ کرتے ہوئے تھوڑا تھوڑا ٹھنڈا پانی ڈالیں یہاں تک کہ ہموس ہموار اور کریمی ہو جائے۔
آخر میں زیتون کا تیل
زیتون کا تیل ڈال کر دوبارہ اچھی طرح بلینڈ کریں۔
چکھ کر ایڈجسٹ کریں
نمک یا لیموں حسبِ ذائقہ کم زیادہ کر لیں۔
🍽️ پیش کرنے کا طریقہ:
پلیٹ میں ہموس نکالیں
اوپر سے زیتون کا تیل ڈالیں
لال مرچ پاؤڈر، پاپریکا یا ہرا دھنیا سے سجا دیں
🌟 ٹپس:
اگر طحینہ موجود نہ ہو تو بھنے ہوئے تل + تھوڑا سا تیل بلینڈ کر کے استعمال کریں
روٹی، پِٹا بریڈ، نان یا سبزیوں کے ساتھ بہترین لگتا ہے

Big Mac Sauce recipe 🍔✨

Creamy, tangy and slightly sweet — just like
McDonald’s!

📝 Ingredients:

½ cup mayonnaise
2 tbsp French dressing
1 tbsp sweet pickle relish
1 tsp white vinegar
1 tsp sugar
½ tsp onion powder
½ tsp garlic powder
½ tsp paprika
A pinch of salt
👩‍🍳 Method:
🥣 Step 1: Mix Base
In a bowl, add mayonnaise + French dressing and mix well.
🥄 Step 2: Add Flavor
Add pickle relish, vinegar, sugar, onion powder, garlic powder, paprika, and salt.
🌀 Step 3: Mix Well
Whisk everything until smooth and creamy.
❄️ Step 4: Rest
Cover and refrigerate for 30 minutes for best flavor.
🍔 How to Use:
Spread on burger buns, use in wraps, sandwiches, or as a dipping sauce for fries

(Restaurant-style, full of flavor!)

🌶️ Peri Peri Chicken Recipe (English)

🛒 Ingredients
For Chicken:

1 whole chicken (cut into pieces) or 1 kg chicken (legs/thighs)
2 tbsp oil
For Peri Peri Marinade:
4–5 dried red chilies (soaked in hot water)
4 garlic cloves
1 tbsp red chili flakes
1 tsp paprika
1 tsp black pepper
1 tsp oregano
1 tsp salt (or to taste)
2 tbsp lemon juice
2 tbsp vinegar
3 tbsp olive oil (or cooking oil)

👩‍🍳 Method

Step 1: Make Peri Peri Sauce
Blend soaked chilies, garlic, chili flakes, paprika, pepper, oregano, salt, lemon juice, vinegar, and oil into a smooth paste.

Step 2: Marinate Chicken

Make cuts on chicken pieces.
Rub the peri peri sauce well on chicken.
Cover and marinate for at least 2 hours (overnight is best).

Step 3: Cook the Chicken

Option 1 – Pan / Tawa
Heat a pan with little oil.
Cook chicken on medium heat, flipping sides, until golden and cooked (20–25 min).

Option 2 – Oven

Bake at 200°C (392°F) for 35–40 minutes, flipping once.
Brush with extra sauce for more flavor.
Option 3 – Grill
Grill on medium heat until smoky and slightly charred.

🍽️ Serving Suggestions

Serve with fries 🍟
Garlic rice or coleslaw 🥗
Drizzle extra peri peri sauce on top 😋

🛒 اجزاء
چکن کے لیے:

1 کلو چکن (لیگ پیس / تھائی / یا پورا چکن کٹا ہوا)
2 کھانے کے چمچ تیل
پیری پیری میرینیڈ کے لیے:
4–5 ثابت لال مرچ (گرم پانی میں بھگوئی ہوئی)
4 جوئے لہسن
1 کھانے کا چمچ لال مرچ کے فلیکس
1 چائے کا چمچ پیپریکا پاؤڈر
1 چائے کا چمچ کالی مرچ
1 چائے کا چمچ اوریگانو
نمک حسبِ ذائقہ
2 کھانے کے چمچ لیموں کا رس
2 کھانے کے چمچ سرکہ
3 کھانے کے چمچ زیتون کا تیل یا عام تیل
👩‍🍳 بنانے کا طریقہ

مرحلہ 1: پیری پیری ساس بنائیں

بلینڈر میں بھگوئی ہوئی لال مرچ، لہسن، مرچ فلیکس، پیپریکا، کالی مرچ، اوریگانو، نمک، لیموں کا رس، سرکہ اور تیل ڈال کر اچھی طرح پیس لیں۔

مرحلہ 2: چکن میرینیٹ کریں

چکن کے ٹکڑوں پر ہلکے کٹ لگا لیں۔
تیار پیری پیری ساس اچھی طرح چکن پر لگائیں۔
ڈھانپ کر کم از کم 2 گھنٹے (یا بہتر ذائقے کے لیے رات بھر) رکھ دیں۔

مرحلہ 3: چکن پکائیں

پین / توے پر:
پین میں تھوڑا سا تیل گرم کریں۔
درمیانی آنچ پر چکن سنہری اور گلنے تک پکائیں (20–25 منٹ)۔
اوون میں:
اوون 200°C پر گرم کریں۔
چکن کو 35–40 منٹ بیک کریں، درمیان میں پلٹ لیں۔

گرل پر:
درمیانی آنچ پر گرل کریں یہاں تک کہ ہلکی سی جلی ہوئی لائنز آ
جائیں۔

🐟 Goan Fish Curry (Authentic & Coastal)

This authentic Goan fish curry is comfort food with a bold punch — perfect with steamed rice!

📝 Ingredients:

Firm white fish (kingfish, cod, haddock) – 500 g
Coconut oil – 2 tbsp (28 g)
Onion (finely sliced) – 150 g
Tomato (chopped) – 120 g
Coconut milk – 400 ml
Tamarind pulp – 1½ tbsp (25 g)
Water – 200 ml
For Curry Paste:
Grated coconut (fresh or frozen) – 80 g
Dried red chilies – 6–7 (adjust to taste)
Coriander seeds – 1 tbsp (8 g)
Cumin seeds – 1 tsp (3 g)
Black peppercorns – ½ tsp (2 g)
Turmeric powder – ½ tsp (1 g)
Garlic cloves – 5 (20 g)
Ginger – 1-inch piece (10 g)

👩‍🍳 Method:

Soak dried red chilies in hot water for 15 minutes.

Blend soaked chilies with all curry paste ingredients and a little water into a smooth paste.

Heat coconut oil in a pan, sauté onions until soft and lightly golden.

Add tomatoes and cook until oil separates.

Stir in prepared curry paste and cook on medium heat for 3–4 minutes until aromatic.
Add coconut milk, water, and tamarind pulp.

Bring to a gentle boil.

Add fish pieces, cover, and simmer for 8–10 minutes until fish is cooked.

Adjust salt, rest for 5 minutes, and serve hot with steamed rice.

Large shrimp, peeled & deveined – 500g (12–14 pcs)
All-purpose flour – 3 tbsp (24g)
Salt – ½ tsp (3g)
Black pepper – ¼ tsp (1g)
Eggs – 2, beaten
Shredded coconut – 1 cup (80g)
Panko breadcrumbs – ½ cup (50g)
Cooking oil – ½ cup (120ml) for frying
Lime wedges – for serving
Sweet chili sauce – for dipping

Instructions:
Pat shrimp dry with paper towels. Season with salt and black pepper.

Prepare three shallow bowls:
Bowl 1: Flour
Bowl 2: Beaten eggs
Bowl 3: Mix shredded coconut + panko breadcrumbs.

Dredge each shrimp in flour, then dip into egg, and finally coat with coconut-panko mixture.

Press lightly to stick.

Heat oil in a skillet over medium heat. Fry shrimp in batches until golden brown and crispy (about 2–3 min per side).

Cashew nuts – 20g (2 tbsp, soaked and ground to paste)

Cumin powder – 1 tsp (2g)
Coriander powder – 1 tsp (2g)
Red chili powder – 1 tsp (2g)
Turmeric powder – 1/2 tsp (1g)
Garam masala powder – 1 tsp (2g)
Black nigella seeds (Kalonji) – 1 tsp (2g)
Salt – to taste
Fresh coriander – for garnish
Ginger juliennes – for garnish

Instructions:

Heat ghee and oil in a pan over medium heat.

Add onions and sauté until golden brown.

Add ginger and garlic paste, sauté for 1-2 mins until aromatic.

Add chicken pieces and cook for 5 mins until lightly browned.

Stir in yogurt, cream, and cashew paste. Mix well.

Add cumin powder, coriander powder, red chili powder, turmeric, and salt. Cook on low heat for 10 mins.

Sprinkle garam masala and black nigella seeds. Cook another 5 mins, stirring gently.

Garnish with sliced green chilies, fresh coriander, and ginger juliennes.

Serve hot with Naan or chapati.
