When milk is boiled and then left undisturbed, a creamy layer forms on top, which is known as malai.
This happens because of three simple steps:
First, heating changes milk proteins.
The proteins lose their natural structure and start interacting with fat globules.
Second, when the milk is kept still, these proteinтАУfat particles move upward and collect on the surface.
Third, during cooling, this layer sets and becomes visible as malai.
ThatтАЩs why:
Stirring prevents malai formation
Low-fat milk forms very little malai
Buffalo milk forms thicker malai than cow milk

Recombined Milk vs Reconstituted Milk ЁЯеЫ тАФ Do you know the difference?
These two terms look similar but are completely different in dairy processing.
ЁЯФ╣ Recombined Milk is created by mixing milk fat + skim milk powder + water.
Here, fat and SNF come from different sources, and processors adjust fat levels separately.
