GUYS!!! I found WILD morels!! First time finding any species of morel in over 6 years of looking. I am now trying to locate the non-native woodchip ones 'black morel' as they fruit in higher numbers. Morel hunting vlog coming!! Anyone else found some? Nows the time πββοΈ

Anyone else have a robin friend? For those that don't follow me on instagram, this is the random life stuff you guys don't get to see π. I'll post a little video on him soon, documenting the hand feeding experience! January has been frustrating with the constant rain down south hence a break from videos. But tomorrow is Imbolc, the land is stirring, crocuses and snowdrops have popped up everywhere: spring is near! I'll be back in the woods very soon, hope everyone is doing ok. π

π²PINE SODAπΎ
I use:
Clip top bottle 250ml
1/2 cup of pine needles / 3 little bunches. More is not a problem, too little and it might not produce many bubbles. Just experiment!
3-4 tea spoons honey. Or more if you wish!!
β’ Needs to be a real sugar source such as honey, maple syrup, castor sugar, brown sugar etc. Sweeteners won't work. I've used organic cane sugar and also raw honey. The raw honey gives a stronger flavour and turns a bit fizzier.
β’ Give the needles a gentle rinse, don't clean them too vigorously. Separate them from the main branch. It seems to help the fermentation process by leaving the needle clusters intact rather than separating them out individually.
β’ Put needles into bottle and fill, leaving at least an inch of headspace at the top of the bottle for air bubbles. Use filtered or bottled water because you can't guarantee there won't be any contaminants in tap water.
β’ Add the sugar, close the lid and give it a shake to distribute.
β’ Put the bottle in a warm (not too hot or cold) area, to ferment. Leave it for 3 days to become carbonated. I usually leave mine 5 days and release some air on day 3 so that it doesn't explode...!

π²PINE SHORTBREADπͺ
40 grams powdered sugar
100 grams butter
Sprinkle of sea salt
Approx 1 heaped tablespoon pine needles
165g plain flour
Oven: approx 175 degrees C
β’ Use clean and dry pine needles or, rinse freshly foraged ones then toast in oven briefly to dry them out (Makes them easier to chop too).
β’ Blend them into the flour (or chop finely and add).
β’ Mix powdered sugar, salt and butter in a bowl until light and fluffy.
β’ Add pine/flour mixture, gently fold in with a spoon and then mix and combine everything with hands.
β’ When done it should be slightly crumbly but hold together if you squeeze it tight. The drier, the better the texture of the biscuits at the end.
β’ Dust a surface with flour, shape dough into a ball and roll out.
β’ Cut out shapes (you can experiment with the thickness) then bake for 10 - 12 minutes / until they start turning light golden around the edges.
