This is âLa Pichadeâ
A delightful tomato tart from Menton, a charming city on the French Riviera near the Italian border. While itâs close to a pizza, itâs actually a unique tomato-based tart with a special crust â somewhere between bread and brioche. Crispy, smooth, and irresistibly crumbly! đ
This version is the âPichade au MaquĂ©â â traditionally made with anchovy paste. I have created a vegan anchovy substitute. So I made it. and the result was superb!

It's extraordinarily flavorful and boost your soups with savory, floral, sweet and briny notes. This a must have condiment of winter. It keeps for weeks, well covered in olive oil. I recently found old photos of my mother and me from when we were living in HyĂšres, a lovely coastal city in the south of France, by the Mediterranean Sea. They brought back so many memories of that gentle, unhurried life, blessed with perfect weather. I also remembered my mother, always preparing traditional dishes for religious celebrations.
My next cooking video is inspired by one of those celebrations â a special one that children especially love.
