Sourdough tip: Put a cookie sheet under your Dutch oven ๐Ÿž

If the bottom of your sourdough keeps getting too dark or burnt, try placing a cookie sheet on the rack underneath your Dutch oven while baking.

It helps block and diffuse some of the direct heat, so your loaf can bake more evenly without scorching the bottom.

Simple fix. Big difference.

A rubber band can make sourdough timing so much easier. โœ…

After feeding your starter, place a rubber band around the jar at the starting level. As it rises, you'll be able to see exactly how much it has grown and know when it has roughly doubled.

It's a simple trick, but it can take a lot of the guesswork out of knowing when your starter is ready to bake with.

Is your sourdough starter looking a little sluggish? Try giving it a boost with a little whole wheat flour.

Whole wheat flour contains more wild yeast, which can help your starter get more active. For this feed, use:
50 g starter discard
100 g room-temp filtered water
80 g all-purpose flour
20 g whole wheat flour

Mix it all together, cover it, and let it rise. Whole wheat often makes starter rise and fall faster, so keep an eye on it. Once it peaks and falls, feed it again and get ready to make your levain.

Feeding your sourdough starter is so simple! ๐Ÿฅ–โœจ

To keep your starter bubbly, active, and ready to help your bread rise, all you need is:

50g old starter
100g filtered room-temperature water
100g all-purpose flour

Mix everything together in a clean jar, stir until it gets thick and sticky, then loosely cover it and let it grow.

If you bake often, you can leave it on the counter. If you only bake every once in a while, keep it in the fridge so it does not need to be fed as often.

One quick tip: Do not pour your sourdough discard down the sink. Toss it in the trash instead so you do not clog your pipes.

Once your starter is active and bubbly, you are ready to bake! ๐Ÿž
