🌟🥣 Baking Tip #5: Avoid Over-Mixing for Perfect Treats! 🧁🥧

Hey bakers! Let’s talk about why you should avoid over-mixing your batter or dough. Here’s why it matters:

1️⃣ Texture matters: Over-mixing develops gluten in the flour, resulting in a tough and chewy texture. Delicate treats like cakes, muffins, and cookies require a tender crumb.

2️⃣ Airy and light: Over-mixing can deflate the air incorporated during mixing, leading to dense and heavy baked goods. Properly mixed batters and doughs have tiny air pockets that contribute to a light and fluffy texture.

3️⃣ Unpredictable results: Over-mixing can alter the consistency of your batter or dough, leading to unpredictable outcomes. It may affect the rise, spread, and overall structure of your treats.

4️⃣ Examples to consider: When making pancakes, gently stir the batter until the dry ingredients are just incorporated. Some lumps are okay! Over-mixing will lead to tough and flat pancakes. Similarly, for muffins, mix until the dry ingredients are moistened, leaving small pockets of dry flour. Over-mixing will result in dense and rubbery muffins.

Remember, a gentle hand and a few lumps are okay when it comes to mixing. It’s better to under-mix slightly and have a tender result than to over-mix and end up with tough treats. Follow the recommended mixing times in your recipes and stop mixing as soon as the ingredients are combined.

Prices of red meat is very high but we need our protein. One of the best meat format that we could easily manipulate is minced meat or ground meat.

I have seen some post about this hard times burger, it is simply using other food ingredients to replace some portion of the meat in the recipe.

Stay tuned as I will share my version of this hard times burger.

Mean time here is one of my burger patty recipe which was part of my recipe book “Motherbee’s Mini shared recipes”


Lean ground beef - 700 grams
Lean ground pork - 550 grams
Freshly minced garlic - 10 grams
Salt - 12 grams
Ground pepper - 1/2 teaspoon
Skimmed milk powder - 20 grams
Parsley, finely chopped - 10 grams
Oregano finely chopped - 5 grams
Finely chopped onions - 130 grams
Oyster sauce - 15 grams
Fresh eggs - 150 grams
Corn starch - 20 grams
Potato flakes/flour - 10 grams
Gelatin solution - 15 grams
* (5 grams of powdered gelatin + 50 grams boiling water ----> just get 15 grams from this mixture, you could keep this in the refrigerator for one week and use it for any jelly dessert).


• Mix all ingredients until well mix, weight about 50 grams and mold into a ball and flatten slightly.
• Grill and until done.
• Make it as sandwich or burger steak. If the mixture is too dry
add more egg or if it is too wet add more corn starch slowly until it is enough to be molded.
