Not the best pic as it's a video segment on pause, from tonight's filming of our meals vlog segment. (every Tuesday, 5pm, YouTube)
I wanted to share the recipe as it was really quite lovely, and that way I too have a written record of it.
Half a courgette and half a carrot, grated.
Small white onion finely chopped.
Fry all of that together for a few minutes until the onion is translucent.
Add a drained tin of butter beans.
Optional: chick'n style pieces, we added a tin of unmeat chick'n.
Stir all that around and then squeeze the juice of half a lemon into the pan and stir again.
Add around half a cup/120ml of plant milk. (we used koko)
Add around half a cup/30g of Nooch. (nutritional yeast)
Keep on the heat until your desired thickness, or add more plant milk if you want it more liquid.
Serve with whatever you fancy, or all alone.
We had chick'n/sumac couscous and a slice of garlic toast.
Waaaaaaay better than expected.

Hello my loves, Paul here. We've taken the sensible decision to not do a livestream today and to do next Sunday instead.
I'm not gonna lie, we always say we're never going to be false or contrived on the channel and today we have nothing planned to do and are both a little preoccupied with 'life', our parents etc.
We're going to have some down time, do all we have to do, and we should be back to our livestreams next Sunday with actual plans and no preoccupation.
Meals vlog will be up on Tuesday, as always.
