This past Sunday, I had a serious sweet tooth, but I didn’t want anything too heavy. I wanted something soft, lightly sweet, and easy. The kind of dessert that feels cozy but still fresh. So I made this almond flour peach cake with fresh sliced peaches, lemon zest, cinnamon, olive oil, and coconut sugar.

Each slice has about 9 grams of protein and 4 grams of fiber, which makes it feel a bit more balanced without trying too hard. And honestly, the best part is how good it tastes. It’s moist, perfectly sweetened and the peaches bake into the top so beautifully. It feels like a proper little summer cake, just made with ingredients I actually feel good about.

Everything I ate for breakfast this week.

Lately I’ve been really intentional about front-loading protein, at least 30g, but 50g is even better, plus a bit of fiber. It helps me stay full longer, keeps my blood sugar more steady, and makes a big difference in my focus and energy throughout the morning. I’m not thinking about snacks an hour later, I feel clear, grounded, and able to move through my day without that constant dip.

I’ve been obsessed with buckwheat lately and this week trying to perfect my buckwheat bread recipe. I’m almost there! This weekend I’ll try making fermented buckwheat bread 😋. The one pictured below was great! Taste almost like rye bread and toasts beautifully! Also, the texture was perfect!! Not too dense and super fluffy with a great chew 😌

I made braised oxtail this week, and instead of simply reheating the leftovers, I turned them into a rich, velvety ragù… then shakshuka the next morning… and finally a slow-simmered, anti-inflammatory bone broth from the bones.

Oxtail is too special, and too expensive, to waste.

The ragù might be my favorite version yet.
